Here's what to expect in this week's meal plan!
It starts with a yummy Slow Cooker Pork Tenderloin. Monday brings Tomato Basil Spaghetti Squash and Tuesday is Marinated Soy Chicken with Snap Peas. Midweek meals include Picadillo and a delicious Grilled Chicken with Peach Salsa. To end the week, there are Turkey Apple Burgers and Shrimp Kabobs.
- Meal Prep: Save time during the week by prepping these items on Sunday.
- Make the spaghetti squash for dinner on Monday night.
- Marinate the chicken thighs and prep the zucchini noodles for dinner on Tuesday.
- Make the Picadillo, it only gets better after a few nights in the fridge.
- Prep and freeze the Turkey Apple Burgers.
- Shortcuts: Use store-bought pico de gallo or mango salsa for the peach salsa on Thursday. Use store-bought turkey burgers and French fries for dinner on Friday.
- Slow Cooker Pork Tenderloin: Make this with chicken breast, chicken thighs, or any cut of pork. Make sure to read the recipe notes to kick up the flavor including, 1)Make it BBQ and toss tonight’s pork with 1 cup of your favorite BBQ sauce, adjusting points and calories accordingly, or 2) Go for Honey Orange and stir together the juice of 1 orange and 2 tbsp. honey. Mix into pork and then broil until crispy.
- Soy and Mango Marinated Chicken: This chicken dish uses a pretty specific mango-flavored rice vinegar, but it will work with absolutely any rice vinegar - plain or seasoned. Make it with any quick-cooking vegetable you like - green beans, broccoli, cauliflower (cut small), thinly sliced cabbage, zucchini, or summer squash.
- Leftover love: Double up the Picadillo.
